Zucca in agrodolce, or sweet and sour grilled butternut squash




Life is bittersweet in all of its nuances, in the big things and the little things.

In the big picture there are love and loss, health and illness, success and failure.

And then there are the daily minutiae, some good and others not so much: a great meal, your wireless not working right before a deadline, a good laugh with a friend, a bad driver in front of you.

An unexpected drawing from your child, a tantrum.

A great day in the office, a note from the teacher.

The list goes on and on, day after day. And then, every once in a while, there is perfection.

Not because everything is exactly what you hoped for or dream of.

Not because something earth shattering happens, but because for a moment in time everything falls into place, like the pieces of a puzzle. They fit perfectly and it just feels so right in its utter simplicity.

Passata di zucca e funghi porcini - Cream of pumpkin and porcini mushrooms




Hi friends, forgive me for being away for so long. I will admit I was tempted several times to post a hurried recipe with bad photos taken on endless rainy days and not much of a story just to let you know I hadn't disappeared into thin air, but then I decided against it, because this is one of the few places in my life were I shouldn't feel like I have to clock in, right?



In between all the pre-holiday craziness and work and just life, I was lucky enough to hop over to NY for a long week end (without kids or husband - a first - but more on that some other time), which required a certain amount of planning ahead and some catching up after, but was totally worth it.



And so now I am finally back to give you the perfect autumn recipe right before winter comes knocking on the door. A recipe that my daughter, who strongly dislikes pumpkin (I know, what is that about???), specifically requested - so that is how good it is. I suggest that even you pumpkin haters out there (if there are any besides my offspring) try it.

Ingredients
1kg pumpkin
20gr dried porcini mushrooms
1l water or vegetable stock
1 onion or 2 scallions
1tbsp olive oil
1tbsp butter (optional for a vegan recipe)
salt
pepper
grated Parmesan cheese (same as above)
pumpkin seed oil and thyme for garnish

Soak the dried porcini mushrooms in a bowl in hot water for at least half an hour before using. Peel and coarsely chop the onion or scallions (or both!).
In a heavy-based pot heat olive oil and butter and sautée the onions. While they are softening, clean and de-seed the pumpkin and cut into cubes. Add into the pot, cook for a few minutes and add the water/stock, the mushrooms and the liquid they soaked in. Cook until the pumkin is tender. Adjust for salt and pepper.
Purée the vegetables until creamy.
Serve with lots of grated Parmesan cheese and freshly ground pepper. I also drizzled over a little pumpkin seed oil and garnished with some thyme.

Pumpkin, Swiss chard and ricotta gnudi (a low carb alternative to ravioli or gnocchi)


After an extrememly warm and sunny September, fall has arrived in all its glory. I can tell by the orange and yellow leaves and the chestnuts covering the sidewalks of the city, I can tell by the variety of apples, mushrooms and pumpkins at the store. I can tell by the plentiful rain, my runny nose and my desire to eat something a little more substantial and comforting for dinner.
 
Enter gnudi.
 
If you are wondering what gnudi are, think of the love child between a raviolo* and a canederlo (or knoedel in German).
 
To be honest, they aren't really closely related to canederli, because gnudi don't actually contain any bread or bread crumbs. They are however reminiscent of them in looks and they share their versatility: you can make them choosing from a wide range of ingredients and you can serve them in broth or with a variety of sauces.
 
But when it comes to the actual preparation, they are much more akin to ravioli, so perhaps the best way to describe them is telling you to picture a naughty raviolo in its birthday suit.
 
 
 
Gnudo is indeed Tuscan dialect for nudo, which means naked in Italian. So gnudi are none other than dumplings or delicate gnocchi (out go the potatoes, in comes the ricotta) made using the same ingredients you would employ for stuffing ravioli, with just a small addition of flour to hold together the fragile ricotta pillows while they are cooking. I used regular flour, but you could probably substitute it with gluten free or no-carb options if you needed/wanted to (rice flour, chickpea flour etc.).
 
Basically, gnudi are a shortcut and they have the added bonus of being low carb. Sure,  butter and Parmesan cheese make a hefty apperance in the recipe, but the true bulk of gnudi is ricotta (which is not a cheese per se) and vegetables. So what it comes down to is that when you are making gnudi you are actually making a quick and pretty healthy vegetarian meal.
 

 

Spinach and ricotta are traditional ingredients for gnudi, but pretty much any leafy green will do and many other vegetables come to mind, from zucchini to eggplant and mushrooms. What is really key is squeezing as much excess water out of the vegetables as you can.
 
You can also swap cheeses: pecorino would work well and so would feta in my opinion.
 
And then there is the sauce: melted butter and Parmesan cheese are a classic, but psssst, if it hadn't been a week night meal (we usually try to keep those reasonably healthy and light), I probably would have fried up some pancetta and served the salty, crunchy morsels scattered over the gnudi. Bacon and pumpkin? Yum.
 
A cream and/or cheese-based sauce would work really well too, if you aren't counting calories. Blue cheese or a raw milk mountain cheese would be perfect to add some character to the ricotta base. And if you are going down the zucchini and eggplant road, a nice tomato sauce would be perfect.

Indian lentil and acorn squash curry (or soup)




 
If you have never heard of a What's App group chat then you also probably don't know how addictive it can get. The other day I decided to create one for my running group: the core group consists in myself, another girl and a guy, but we have had quite a few new entries lately so organizing our outings has become more engaging than before. We have been spending so much time texting and messaging on What's App individually to figure out who is coming and where to meet up that I thought it would be practical to create a What's App group chat. One of us writes, who wants to run answers and who doesn't abstains. Simple. Or so I thought.
 
 
 
 
 
Let's just say the group chat took on a life of its own.
 
Yesterday, the only guy of the group came out of an evening class to find 26 messages on his phone.

Quickly he checked his What's App account, wondering what had happened since he had confirmed his presence.



When he opened the messages to read them he was submerged by comments along the lines of*:

"It's supposed to be really cold tomorrow morning; I really need to get some new pants. The other day I stopped for a coffee after running and the guy who always serves me asked me why I was in my pjs"
 
"I am wearing running tights and a zip top; d'you think I should wear a tshirt under that or just a bra?"
 
"I'm not coming. I need some sleep. I know, I know, I am a lazy bum. I suck"
 
"You don't suck, you ran a marathon girl!"
 
"Yeah but you are incredibly consistent, unlike me"
 
"I know, isn't she? She never misses a day!"

"Yeah, but who's the one who managed to lose 10lbs???"


 
 
The poor guy didn't know what he was getting himself into when he accepted the invitation to our group chat, but he truly is a good sport and plays along. He is our guardian angel, always running back and forth to check on us in the pre-dawn darkness. 
  
Yup, it is dark now when we run. Fall is in the nippy air, dry leaves and those chestnut burrs I already mentioned recently crunch under our sneakers as we jog.
 
Autumn has come, with its lovely array of seasonal fruits and vegetables.
 
 
 
 
 
Pumpkin is definitely a favorite of mine and I like it prepared in pretty much any manner. My daughter, however, has recently developed a dislike for it because she finds the sweetness overpowering, so I have been looking for ways to use it without its flavor being too overbearing because pumpkins and squash are so filled with antioxidants and vitamins.
 
This vegetarian (or actually vegan) curry is ideal: it is packed with flavor yet delicate, the pumpkin adding creamy texture, the perfect vehicle to absorb all the spices and heat. My daughter didn't even notice the pumpkin until, during her second helping,
 I admitted it was actually one of the main ingredients. She made a disgusted faced, then shrugged and went on eating.
  
The curry paste I used as a base is a loose adaptation of a Jamie Oliver korma paste recipe.

Pumpkin muffins with streusel topping and maple cream cheese filling


You know from my last post that the past week has been kinda rough. On Friday my colleagues and I filled box after box, took our children's drawings off of the walls, erased the pictures of them on our desktops. Co-workers from other floors filed in one at a time or in small groups to shake hands, hug us and wish us luck. We had a farewell coffee with pastries and foccaccia. A tear or two was shed. It was tough. The hardest part was saying goodbye to three great girls I have been working with for a long time, some even eight years. In this time they have become good friends, a family away from home. We became mothers together, we literally grew up together and all I can say is that I still miss being with them in the same room every minute of my working day.



When I got home yet another good friend came to bid me farewell.  An American expat like myself, our girls were born a few days apart and literally grew up together, going to the same day care, pre-school, kindergarden and elementary school. Needless to say they are best friends and over the years our families bonded. We went on to have two boys and spent many a vacation and week end together. Now she has left too, she lives in a different city and I am happy for her and her new life despite the loss.



But you will agree with me when I say it is cruel to say good bye to four sisters in just a handful of hours.

But then I had a bittersweet phone conversation on Skype and met beautiful little Laura. And the next evening my best friends and husband stepped in at just the right time and organized another, delayed birthday party for me. Just to remind me that I am one lucky girl, with lots of great friends and a job to keep me safe and comfortable.



And so instead of curling into the fetal position and crying myself to sleep like I admit having considered on Friday I decided to celebrate the coming of the fall and Halloween and all that is good in life. Life is full of spice, just like these muffins (that are really cupcakes in disguise, minus the mess because the frosting is on the inside), with a rich and sweet heart.
Make these for your family on Halloween. They are insanely moist with a creamy heart and the lovely crunch of sugar and cinnamon on top.

Fall in a bite: pumpkin cinnamon rolls with maple icing




It is grey and rainy, chilly but not really cold. Leaves are falling from the trees, even the sidewalks of this not-very-green city are carpeted in browns, yellows, reds and oranges. When I ride home from work on my bike, I smell the first roasted chestnuts of the season and all I want to do is sit in front of a blazing fire and peel them, quickly moving them from hand to hand to avoid burning myself and getting my fingers all black and sooty.

I like the fall, when it starts getting dark early and you look forward to getting home and putting on your comfy loungewear; when you eat soup every evening and you still want more; when you start planning for the holidays and making lists, only to end up doing everything last minute anyway and promising you will get it right next year.

Gnocchi di zucca - pumpkin gnocchi


I am sure you all know what gnocchi are, those soft potato dumplings that are divine with any sauce, from the simplest tomato and basil sauce to a lovely fresh pesto or any fancy combination you can come up with. Gnocchi are Italian comfort food, like most of their cousins all over the world.

Unfortunately, I have boarding school memories of heavy, sticky, hard-to-swallow ones that kept me at a distance for many years. I never really became a convert until I tasted my first gnocchi di zucca.

If you love pumpkin at its simplest, these are for you. Its orange, delicate autumn flavor is the star. They are quick and easy to make. All you need is five ingredients, a pot of boiling water and two spoons and you will make the softest pillows of buttery, cheesy sweetness you could ever imagine. 

Try these and make your family and friends an unexpected pumpkin dish for Halloween or Thanksgiving.

Tershi, a Libyan pumpkin dip


Thanks to another food blog I enjoy reading, Jasmine and Manuel's Labna (they mainly write in Italian but some of their posts are in English too), I discovered a great new African recipe. Hop onto a time machine with me and let's travel to the Libya of many centuries ago to discover a delicious dip made by the Jewish community of Tripoli.
It is called tershi or cershi and it is perfect to make this time of year, its main ingredient being pumpkin.
It is sweet, sour, spicy and aromatic. It is not for vampires or first dates as you should not go lightly on the garlic. I made it as an appetizer to eat with thick, crusty pieces of bread but I am sure there are a million other ways to eat it (couscous, meat, cheese, soups are just some of the things I would like to try with this new found love).



Hurry up and try it, you may discover a great new dish to surprise and impress your guests with at Halloween and Thanksgiving! And last but not least, if you have an overload of pumpkin in the house these days, Jasmine informs us that you can preserve it for later use.
